About the beer:
Staring into the Shift is a hazy American Pale Ale with a reasonable 5% ABV. Featuring Galaxy, Riwaka and Motueka hops, the beer smells of the tropics, has notes of passion fruit, papaya, and lychee, feels like pillows, and yet doesn’t have all the ramifications of its high-alcohol cohorts. It should be a crusher and the perfect accompaniment to a game.
About the sandwich:
The sandwich, dubbed The Knuckleball, is centered around a pork cutlet that is a nod to Sarris’ German and Jamaican roots, run through chef Ryan McLaughlin’s Francophile brain: braised pork knuckles (a German delicacy known as Haxe) are formed into a crunchy patty of sorts. This result of months of virtual brainstorming is then topped with matbucha, a Moroccan tomato sauce with some punch and chili to it. Laden with pickled red onions and greens and then shoveled between two slices of ciabatta.
